These skewered shrimp are bathed in a sweet and spicy sauce. To increase the potency of the spices, marinate the shrimp in some of the sauce for about 10 minutes before you skewer and grill them. To decrease the potency, skip the marinade step and only use the sauce to brush the skewers when they are on the grill.
Ingredients:
for the skewers:
10 medium size shrimp
8 grape tomatoes
10 pieces of pineapple
for the marinade/brushing sauce:
1 tsp. olive oil
1 tsp. sesame oil
1 tsp. brown sugar
1-2 tsp. sriracha (or other hot sauce)
1 tsp. low sodium soy sauce
1 Tbs. minced cilantro
Directions:
Mix the marinade/brushing sauce. Place the sauce in a plastic bag, adding the shrimp and pineapple to the bag. Shake the bag to distribute the sauce. Refrigerate for 10 minutes. Skewer the shrimp, pineapple, and tomato. Alternate so they make a pretty pattern. Use a brush to bathe the skewers with any remaining sauce. Grill about 3 minutes per side, until the shrimp are pink and the pineapple is slightly brown in places. Serve immediately.
Serves 2, easily doubled
