Haricots Verts with Pineapple


Haricots Verts are the French version of green beans. They are slightly longer and thinner than most "American" green beans, and that means that the taste is slightly less, well, beany. I've paired them here with fresh pineapple, and got seconds all around!

Ingredients:

3 cups trimmed haricots verts (or use green beans)
1 tsp butter
1/2 cup chopped fresh pineapple
1/2 cup chopped pickled red onion, or red onion
1 tsp sesame oil
1 Tbs minced thai basil
1 tsp black sesame seeds

Directions:

Bring a small saucepan of water to a boil. Add the green beans and cook for about 3 minutes, until crisp tender. Heat a nonstick skillet over medium heat. Add the butter and the pineapple and onion. Cook until the pineapple begins to color, also about 3 minutes. Drain the green beans and toss them into the pan with the pineapple and onion. Drizzle with the sesame oil, then add the basil. Top with the sesame seeds and serve.

Serves 4

Stealthy Cooking Tip: Sometimes adding something sweet just sweetens up everything! The addition of pineapple here magically turns these green beans into a mouthwatering side dish. Call them what you will, they're delicious!
