Carne Asada literally means grilled beef, but I started out with grilled turkey burgers. These turkey burgers have the depth of flavor of carne asada, but also are lower in saturated fat. I covered them with the usual suspects and came up with a meat taco that's got the WOW factor going for it!
Ingredients:
1/2 pound ground turkey
1 tsp lime juice
1/2 tsp ground cumin
1 jalapeno pepper, deveined and finely chopped
1 tsp low sodium soy sauce
2 tsp olive oil
6 cherry tomatoes, halved
1/4 cup chopped cilantro
1/2 avocado, sliced
2 lime wedges
2 Tbs chipotle mayo (mayonnaise mixed to taste with some chipotle chili seasoning)
1/2 cup fresh salsa
1/2 cup grated cheese (or soy cheese)
4-6 corn tortillas
Directions:
Lightly mix the ground turkey with the lime juice, cumin, jalapeno pepper, and soy sauce. Form into two or three patties. Heat a nonstick skillet over medium heat, add the olive oil, then add the turkey patties. Cook about 1 minute on the first side, then flip over. Reduce the heat to low, cover, and cook until done, about 5 more minutes. Remove the turkey patties from the heat and break apart.
Prepare the vegetable and the tortillas while the turkey patties are cooking. Arrange the tomatoes, cilantro, avocado, lime wedges, mayonnaise, salsa, and cheese on a serving platter. Heat the corn tortillas in dry skillet over medium heat until heated through.
To serve, let each person build their own taco by adding some of the meat and some of the toppings to their tortilla. Enjoy!
Serves 2 or 3
Stealthy Cooking Tip: Serve with a side salad or a fruit salad for a complete meal.
