Fall foods are all about the color orange, in all of its varieties and depths of color. This salad is a testament to the color orange. It's brimming with fall colors!
Ingredients:
2 cups salad greens
1 persimmon, cored and diced
1 orange, peeled and diced
1/4 cup dried cranberries
1/4 cup chopped pecans or pistachios
1/4 cup goat cheese or dairy free cheese
1/4 cup vinaigrette
Directions:
Mix all salad ingredients together and serve - how simple is that!
